Austrade’s Barangaroo office had a big group to feed, and the order reflected that. Twenty-six sandwich, wrap and baguette platters formed the core of the lunch, enough to move through a crowd quickly without anyone waiting around. Alongside those, two gluten free chicken avocado sandwiches were ordered separately, which is exactly the kind of thing that gets missed when catering is organised in bulk. Having them confirmed individually meant those two people ate just as well as everyone else.

The seasonal fruit platters landed at the end of the spread, though in practice they probably got picked at throughout. Two regular sizes for a group that size tends to disappear faster than people expect. Austrade’s team does this kind of midday catering regularly, and the order was put together with that practical rhythm in mind.
