Flourish Australia in Cronulla ordered for what looked like a sizeable team lunch, and the order reflected that. Ten sandwich platters alongside five gluten free sandwich platters meant nearly everyone had something they could eat without having to ask around or make do with a side dish.

The salads sat alongside the sandwiches rather than as an afterthought. A large falafel salad and a large Asian greens salad gave people something to build a proper plate from, not just a token green option. The fruit platter was the kind of thing that gets picked at throughout the afternoon once the main lunch is done.

The gluten free platters being a separate order rather than a mixed-in accommodation is something we see work much better in practice. People with dietary needs could just go straight to their platter without having to check anything.
