Extra Hungry? Make 3 larger salads. Have a crowd? Make 1 giant sharing salad. It’s up to you!
Rinse the brown rice grains with cold water and place in a saucepan on the stove. Add 2 cups of water and bring to the boil. Reduce heat and simmer covered for 25 minutes. Remove from heat and stand covered for 5 minutes. Hot Tip: Cook all the rice and store in the fridge for future bowls.
While the rice is cooking, pick off some coriander leaves, slice up the chicken and slice avocado.
Step 1. Layer up your bowl with the rice, pumpkin, avocado, corn, chipotle chicken, jalapeños, coriander and corn chips.
Step 2. Slather with dressing and give it a good mix.
Step 3. Top with a squeeze of lime.

Suggestions to change up your salad. It may mention additional ingredients not included in your kit.
Want to change it up even more? Make it nachos! Assemble corn chips on a baking tray with rice, chicken, pumpkin and corn. Top with your favourite cheese. Bake in the oven at 230ºC for 15 minutes or until cheese is melted. While corn chips are baking, mush up some avocado with the lime juice, coriander, salt and diced jalapeños to make a quick guacamole. Serve nachos with your quick guac and the chipotle mayo on the side.
Prefer your salad warm? Serve with warm rice and microwave the chicken and pumpkin for 30 seconds.
