The kit includes enough ingredients for four individual serves.

Extra Hungry? Make 3 larger salads. Have a crowd? Make 1 giant sharing salad. It’s up to you!




Rinse the brown rice grains with cold water and place in a saucepan on the stove. Add 2 cups of water and bring to the boil. Reduce heat and simmer covered for 25 minutes. Remove from heat and stand covered for 5 minutes. Hot Tip: Cook all the rice and store in the fridge for future bowls.

 While the rice is cooking slice up cucumber thinly.


Step 1. Layer up your bowl with the rice, cucumber, roast pumpkin, spinach, edamame and marinated tofu.

Step 2. Slather with dressing and give it a good mix.

Step 3. Top with a squeeze of lime, crispy shallots and pickled ginger.

Supercharge your salad
Suggestions to change up your salad. It may mention additional ingredients not included in your kit.

Want to change it up even more? Make it a fried rice. Heat up some oil in a pan over medium. Cut the tofu into smaller cubes and add to the pan with the rice, pickled ginger and the rest of the vegetables, leaving out the cucumber. Add in a bit of the dressing to coat the rice, but not too much it makes it soggy. Take off the heat and serve with cucumber and crispy shallots. Want even more of a flavour kick? Fry off some garlic and chilli in oil to start. Or fry off an egg before you add in the rice.

Prefer your salad warm? Serve with warm rice and microwave the tofu and pumpkin for 30 seconds.

Want extra protein? Top salad with a fried or boiled egg.
