The sushi and rice paper rolls sat alongside as a lighter option, and that balance between the two made sense for a midday spread across a busy office floor.

People could walk past, grab what they wanted, and get back to their desks. The rice paper rolls in particular tend to disappear quickly in office settings, and that was likely the case here too.
