The Biointelect team in Sydney had a solid lunch set up for them recently, and the order made a lot of sense for a mid-week sit-down. Five baguette platters formed the base of it, which gave people something to work through at their own pace while the two salads anchored the meal properly.
The Crunchy Chicken Fattoush and the Chicken Caesar both travelled well, and having them alongside the baguettes meant the food covered different preferences without anyone needing to make compromises. The fattoush in particular holds its texture better than most salads at that scale, so it still looked the part when it hit the table.
Two platters of salad between what was clearly a reasonable-sized group meant portions stayed generous rather than token.
