The College of Law team in Sydney had a big order in, and it was clearly built around feeding a decent-sized group through a long stretch of the day. Ten baguette platters, ten wrap platters, and ten sandwich platters formed the backbone of the spread, enough to keep people moving through without any one thing running out too quickly. That volume of handheld food tends to work well in training or seminar settings where people are eating between sessions rather than sitting down for a proper meal.

Alongside that, the salad platters filled out the table nicely. The Chicken Caesar, the Chicken Vietnamese, and the Vegan Mediterranean each brought something distinct, so there was genuine substance for people eating lighter or avoiding meat entirely. The fruit skewers, two packs of twenty, were the kind of thing that disappears faster than expected once the afternoon hits.
