Hyatt Regency Hotel keeps a busy kitchen, and an order at this scale makes that obvious. Six hundred pieces went out to Sydney for this one, split evenly between the turkey, apple and raisin slaw milk buns and the Mediterranean roast vegetable, rocket, goat cheese and pesto mayo tomato wraps. That is a serious volume of food to have ready at once, and both items needed to hold up well given how many hands they were passing through.
The gluten free options sat alongside the main order rather than as an afterthought. The chicken and tomato fingers and the hummus and veggie fingers gave guests with dietary requirements something that actually fitted the occasion rather than a compromise plate.
The tomato wraps in particular travel well and seem to suit the Hyatt Regency team down to the ground. Three hundred of them gone suggests that much.
