The Sheraton Grand Sydney Hyde Park sits right in the middle of one of the busiest parts of Sydney, and an order of this size needed to land cleanly. With 575 finger sandwiches across four options, the sheer volume meant that organisation on arrival mattered as much as the food itself.
Pastrami with horseradish cream cheese, onion, tomato and mixed leaves on multigrain made up the bulk of the order, which made sense given the crowd. It holds well, travels predictably, and satisfies without being fussy. The roast pumpkin with dukkah, spiced chickpeas, rocket and hummus on focaccia came in at 175 pieces, with a separate gluten free and dairy free version of the same filling on GF bread for guests with dietary needs. A smaller run of tuna, red capsicum, red onion and mayo on panini rounded things out.
What stood out practically was how the dietary options mirrored the standard fillings rather than offering something entirely different. Guests with restrictions were eating the same flavour profile, just on a different base.
