The Sydney CBD keeps us busy, and a delivery to Sheraton Grand Sydney Hyde Park is always one we take seriously. With 280 finger sandwiches heading into a hotel of that calibre, the order needed to hold up both in presentation and in volume.

The tuna with red capsicum, red onion, mayo and lettuce on Turkish bread made up the largest portion of the order, and for good reason. It travels well, it suits a broad crowd, and the Turkish bread stays firm without going soft under the filling. The egg and chive mayo on wholemeal came in at 170 pieces, which tells you this was a proper working lunch, not a light afternoon offering. The curried jackfruit fingers on gluten free bread rounded things out for the guests who needed a vegan and dairy free option, with the pickled red cabbage giving those a bit more structure than a standard vegan finger tends to have.

At that quantity, timing on arrival matters more than anything else.
