The Placemaking NSW team in The Rocks ordered lunch for a decent-sized group, and the brief was clearly practical. Twenty-four sandwich, wrap and baguette platters formed the core of the order, with four individual half sandwiches added on top to cover specific dietary needs. A gluten free chicken avocado, a gluten free egg and cress, a vegan crunchy salad, and a hummus and veggie option each went to someone in the room who needed something outside the main platters.
That kind of ordering is actually quite efficient. Rather than trying to build every dietary requirement into the shared platters, the individual options sat alongside them and gave those team members something made specifically for them. The hummus and veggie in particular tends to be a quieter order but one people are genuinely glad to see arrive.
