Ten sandwich, wrap and baguette platters is a substantial order for any workplace, and for the Alquemie Group team in Waterloo, that volume made sense. A group that size moves through food quickly, and having that many platters meant nobody was circling the table waiting for a gap.

The couscous, pumpkin and feta salad platter sat alongside the sandwich platters rather than being treated as an afterthought. That combination gave the table some texture beyond the hand-held options, and the feta in particular tends to hold up well over a longer lunch period without wilting or losing its character the way dressed leaves do.

The couscous was almost completely finished by the time we checked back in. The sandwiches, predictably, went first.
